This "Vino Spumante di Qualità" is the fruit of white wine making using Chardonnay and Pinot Nero grapes blended in quantities which vary according to vintage. After careful selection of grapes and base wines, there is meticulous preparation of the cuvèes, which begin their prise de mousse in spring, in underground cellars where the temperature remains at a constant 12-13°C. From this point, numerous manual operations are carried out over a maturation period of more than 36 months, a choice which Renato Fronza has made to reach the goal of this product.In this way the Spumante Riserva Academia is born, with a placid, harmonicflavour which is slightly acid and dry, with an extremely fine and stimulating, almost mischievous bouquet: a different spumante. |
